2. Turn off the flame and lower the water temperature to 90 or 95 degrees Celsius. Use the mercury thermometer to measure the water temperature and be careful not to have the mercury thermometer touch the bottom of the stockpot.
3. Stir 100 grams of tea leaves into the stockpot until well blended.
4. Cover the stockpot with the lid and let the tea leaves infuse for 10 minutes.
5. After infusing the tea leaves, please stir everything well, strain the tea leaves out and pour the tea into a tea barrel.
6. Before serving a cup of black tea, make sure to open the lid of tea barrel for another 30 minutes for the best.
